wake & bake

Rise and Shine! 

I find that it is much easier to face the "draining" days of suburbia when my morning cup of joe is paired with a freshly baked breakfast treat. In an attempt to embrace the new fall season, I give you my original recipe for apple/cinnamon/walnut muffins- low calorie & low fat, of course!

(also proven helpful in comforting the resurfaced anxiety that you may experience after preceding rant)

"Autumn Muffins"

dry bowl
1/2 cup whole wheat flour
1/2 cup unbleached flour
1/2 cup oats
1/4 cup toasted wheat germ
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon 

wet bowl
1/4 cup veg oil
1/2 cup brown sugar
1/3 cup eggwhites
1/2 container of plain yogurt
1 teaspoon vanilla

Add dry to wet in batches. Then gently mix in-

1 apple, peeled & finely chopped (freshly picked from the orchard, of course)
2 lunch box containers of apple sauce (1 cup-ish)
1/2 cup of raisins (or not)

Scoop bater into muffin tin.

Topping
mix and sprinkle on top:
1/4 cup brown sugar
1/4 cup chopped walnuts
1 teaspoon cinnamon

bake @ 400 F, 15-20 minutes. 

 where else but in the uneventful suburban world of dieting housewives would I be inspired to create such a treat?
